Comprising 55% Coonawarra Cabernet Sauvignon and 45% Barossa Shiraz, this blend epitomizes the quintessential Australian fusion of two esteemed grape varieties and regions. It harmoniously marries the linear elegance, firm tannins, and enduring structure of Cabernet Sauvignon with the opulent, textural richness of Shiraz. The Caley is crafted with longevity in mind; while its sumptuous richness delights in its youth, its inherent elegance and structural integrity ensure a lifespan exceeding a decade and a half.

Sourced from three exceptional vineyards spanning the Coonawarra and Barossa regions, the Cabernet Sauvignon and Shiraz batches underwent separate fermentation in open fermenters. Utilizing indigenous or 'wild' yeasts naturally present on the grape skins, fermentation contributed complexity, richness, and exquisite texture. Careful management, including gentle plunging and pulsing of the skins, ensured an optimal balance of color, tannin, and phenolic extraction.
