Established in 1846, Champagne Devaux stands as a premier producer in the dynamic Côte Des Bar region of southern Champagne. Following the passing of the last member of the Devaux family in 1987, ownership transitioned to a consortium of esteemed growers in the region. They pledged to uphold the highest standards and preserve the legacy of the House.

Pinot Noir reigns supreme in the Côte Des Bar, particularly in the Aube with its Kimmeridgian limestone-clay soils. The region's warmer climate ensures consistent ripening, making Pinot Noir a cornerstone of many cuvées and the backbone of Devaux's portfolio. Additionally, Devaux serves as a grower for Krug.

The D collection represents the core range, epitomizing the House's commitment to extensive aging before release, with non-vintage cuvées aged for a minimum of 5 years and vintage cuvées for 10 years. Chef de Cave Michel Parisot, overseeing 25 vintages, possesses an intimate knowledge of the region, earning Champagne Devaux placements on prestigious wine lists worldwide.

The collection comprises a meticulous selection of sustainably cultivated vineyards spanning 50 hectares, with an emphasis on top-quality Pinot Noir (55% sourced from Cote Des Bar) and Chardonnay (45% from Côte des Blancs, Montgueux, and Côte des Bar), using only first pressings. Base wines undergo primary fermentation primarily in stainless steel tanks, with a 10% portion fermented in small oak barrels. Partial malolactic fermentation is followed by aging on lees for a minimum of 5 years, surpassing the legal requirement of 15 months. This prolonged lees aging imparts finesse, contributing to a finer, more persistent effervescence and nuances of green cashew nut autolysis. Thirty-five percent of reserve wines are aged in large oak casks, including some from perpetual Chardonnay solera and Cuvee D solera dating back to the 1990s. The Brut style exhibits a dosage of 8g/l.
