This wine is its light, bright straw-green colour; the bouquet and palate, however, are in a class of their own, with a structure coming from the complete autolysis of the yeast lees (the sparkling wine equivalent of rancio in old Rutherglen fortified wines) and flavours of biscuit, honey and grapefruit rind.
