Yalumba The Caley Cabernet Shiraz Fifth Release 2016
Tasting notes from the producer:
This marks the fifth release of Yalumba's esteemed flagship wine, 'The Caley,' and perhaps their finest to date. A timeless blend of two noble grape varieties sourced from Australia's renowned wine regions, Coonawarra and Barossa, it comprises 71% Coonawarra Cabernet Sauvignon and 29% Barossa Shiraz. After maturing for 21 months, 25% in new French oak barriques and the remainder in two-year-old and older French oak barriques, the wine emerges with unparalleled depth and complexity.
Presenting an impenetrably dark, pitch-black core with a profound crimson-black hue, this wine exudes both strength and finesse. The nose captivates with intricate aromatics of blackcurrant, blackberry, and subtle hints of liquorice, harmonizing with notes of vanillin cedar, tobacco, earthy nuances, and spicy bay leaf. On the palate, it reveals a lavish yet refined structure, showcasing a symphony of blackcurrant, liquorice, and blackberry flavors that unfurl across the palate with regal elegance. Layers of vanillin cedar, tobacco, earthiness, dried herbs, and spice complement the fruit profile. Firmly constructed with robust yet polished tannins, it exhibits remarkable persistence and depth, culminating in a remarkably long, generous, and sophisticated finish.
This wine is destined for greatness with the potential for cellaring up to 10-15 years, evolving gracefully over time.
