Gently hand-harvested, the grape bunches undergo meticulous sorting before being processed as either whole bunches or whole berries. Half of the block undergoes fermentation and maturation in a 3500L upright oak cask, with 20% whole bunches incorporated and topped up with a 100% whole bunch component for maturation. The remaining fermentation occurs in Yarra Yering half-tonne open fermenters, where the wine is gently hand-plunged twice daily. Following fermentation, the wine is air bag pressed to extract the last remnants of fermenting juice from the numerous whole berries. It is then aged for 12 months, with 50% in the 3500L two-year-old cask and the other 50% in French oak puncheons (500L), with 10% new oak.
This perfumed cool-climate Shiraz offers a medium-bodied delight, accentuated by hints of aniseed spice. Vibrant blue and black plum fruits inject a fresh vitality into the palate, complemented by layers of liquorice spice that contribute to its structural complexity. Characteristic of this block, subtle notes of cured meat and smoky-char flavors linger on the back palate. Medium-weighted and driven by the purity of its fruit, the oak presence is subtle, serving as a faint background seasoning, with a touch of stalk grip adding further interest.
