Few names in Australian winemaking carry the innovation of Penfolds. Known for their experimentation, curiosity and uncompromising quality, the label continues to deliver luxury wine after luxury wine. At Sense of Taste, we’re proud to feature three of many exceptional bottles that truly capture Penfolds’ winemaking philosophy - Bin 389 Cabernet Shiraz 2022, St Henri Shiraz 2019, and Bin 707 Cabernet Sauvignon 2019.

Penfolds Bin 389 Cabernet Shiraz 2022

Often referred to as ‘Baby Grange’, Bin 389 holds a special place in Penfolds’ lineage. First crafted in 1960 by the legendary Max Schubert, this wine helped forge Penfolds’ reputation amongst Australian red wine drinkers by combining the structure of Cabernet Sauvignon with the richness of Shiraz.

The 2022 vintage brings with it a forward-thinking palate with precision and depth. Featuring contrasting flavours of savoury and sweet, like fennel, pickled turnip, and white radicchio, paired with red licorice and cherry. Bin 389 would compliment many meals in these cooler months. Consider opting for a rich beef Wellington or a simple American-style beef burger.

Penfolds St. Henri Shiraz 2019

A counterpoint to Grange, St Henri offers a time-honoured and alternative expression to Shiraz. First released in the 1950s, this wine is matured in large, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character.

The 2019 vintage delivers a powerful yet poised palate, brimming with dark fruits, spice, and a hallmark savoury edge. This wine plush when young, gaining soft, earthy, mocha-like characters with age. This wine would be enjoyable alongside a rich meat dish like beef stew or slow-cooked lamb with crispy, roasted potatoes.

Penfolds Bin 707 Cabernet Sauvignon 2019

Continuing the legacy of their Cabernet Sauvignon craft, Bin 707 is a rich and powerful wine that exemplifies Penfolds’ ‘House Style’. This wine is crafted with a blend of fruit from some of South Australia’s finest regions, including McLaren Vale, Coonawarra, Barossa Valley, and Padthaway.

With aromas of cedar, vanilla, cocoa, and cassis mingle with hints of mint and plum. The palate is full-bodied and concentrated, showcasing the characteristic richness. These flavours will pair best with a beautiful roasted lamb or fattier cuts of steak like Scotch fillet, mushrooms and blue cheese.

For collectors and serious Cabernet lovers, the 2019 Bin 707 is expected to age gracefully, developing further complexity over the next two decades.
